Grown-Up Lunches!

A lot of times we tend to only focus on what the kids are having for lunch. Why? Because that's what parents do. They pack the kids a super cute, super healthy lunch and forget about themselves. We end up having a candy bar and soft drink for lunch. Now I don't know about you, but this is totally me. So today I am sharing a few lunches that the adults in my house had last week. These lunches are sure to help us stay on track. All are packed in EasyLunchboxes.


This is a take on the restaurant style bistro box. This is lunch for my mom. She has summer sausage, fresh peppered mozzarella, a boiled egg, grapes, carrots, a cheddar cheese stick, and bagel chips.


This is a lunch I made for myself. I have ribbon noodles with a simple garlic butter sauce I made myself, parmesan cheese, sugar snap peas, peppers, cucumbers, and carrots.


This one was my favorite and the easiest lunches to pull together. The night before I had made crockpot chicken fajitas. They were so tasty and we had quite a bit of leftovers. I have chicken, sautéed peppers and onions, cheddar cheese, and a clementine. This lunch is perfect for the office. To heat just remove the orange and cheese cup, pop in the microwave for about a minute, then put your fajitas together and enjoy!

Crockpot Chicken Fajitas

2-3 lbs. of boneless chicken breast
1 1/2-2 packs of McCormick fajita seasoning  (depending on your taste)
1 cup of water

Put everything in the crock pot and cook on low 6-8 hrs. When fully cooked shred chicken and serve on flour tortillas. I also use this chicken to make chicken nachos. We also stir fry onions and peppers for our fajitas.



All of todays grown up lunches were super easy to make and have a nice variety. Much better than that soft drink and candy bar! Remember that YOU deserve a good healthy lunch also.

Halloween Bento Lunches!

Halloween is almost here. Just a few more days! So these are the last of the Halloween themed lunches. I have three super cute lunches for you today. They are all very simple to make and actually only took thirteen minutes to create. All three lunches are packed in EasyLunchboxes!

Yummy Kawaii Bento Review!

Today I am reviewing Yummy Kawaii Bento by Li Ming Lee. Now I am a huge lover of cookbooks! I am also a huge fan of bento! When you combine the two you can pretty much bet that I am going to love it! Yummy Kawaii Bento does just that. There are so many awesome lunches. There are also several recipes in the book. I am more of the American style bento maker. This cookbook gives me the information and instructions I need to go outside of that box. So I can create something different inside the box. Each page has detailed instructions to make things easier for you to make each lunch creation.

Today I made two lunches from the book. They aren't exactly the same as the book shows, but in my opinion that's the beauty of bento. You can pretty much take any idea and run with it. You can make it your own and tailor it to your families likes.

My first is called. Bear Sandwich Rolls.

Here is my version. There are two ham rolled sandwiches, cucumbers, a clementine, peppers, and cashews.

My second lunch is called. Chicks In Bread Cup Nests! I made the chicks and used regular eggs instead of quail eggs.

This lunch has two hard boiled eggs, a clementine, cashews, peppers, cucumbers and Annie's snack   mix.

Mummy Sandwich!

I honestly can not believe that Halloween is almost here! We have been so busy at my house making and putting together costumes, the time has just flown by! This year three of the kids are going as Doctor Who characters. The oldest is going to be the "11th Doctor". The youngest girl is going to be a "Weeping Angel", and the boy is going to be "The Empty Child", from "Are you my mummy?" Boy it has been a lot of work, but it is so worth it. The middle girl is going to be a 80's chick. Talk about the odd man out. lol It is what it is, and that's what she wants!

Today I made this super cute mummy sandwich! It was also so quick to make. Five minutes from start to finish. Like todays lunch, this will be a super quick post about todays lunch!



This lunch is for the youngest girl. She has a ham sandwich, sweet peppers, carrots, sugar snap peas, grapes, a clementine, cheese sticks, and yogurt star cookies.

Halloween Lunches in EasyLunchboxes!

It's finally October! This is my favorite season or themed lunches. Today I have three Halloween themed lunches for you all in EasyLunchboxes! These lunches were super simple and very quick to make. Each lunch took about five minutes. I put together this cute little collage to showcase my simple Halloween themed lunches.

All three lunches are for my youngest daughter. Each one is simple and has easy to find ingredients. Each lunch includes two veggies and one fruit. A ham sandwich and a small treat. It is the month for treats after all. Making a themed lunch doesn't have to be a daunting and time consuming. I love making quick and fun lunches. These three are perfect examples of the quick and fun lunches you can make in just five minutes.

Talk Like A Pirate Day!

Ahoy Mateys! It's talk like a pirate day tomorrow! So today I have a special pirate lunch for you. This is my very first pirate lunch and I am lovin it. So rest your peg leg for a just a minute and check this out.

Here you have Captain Jack and his bonny sister Jill! These two scurvy dogs are too dang cute to walk the plank! So I'll just settle for them captaining the EasyLunchbox fleet!


Both of these lunches are the same. Each of my young castaways has a ham sandwich, sugar snap peas, carrots, peppers, grapes, and yogurt covered pretzels.

Roald Dahl Blog Hop!

Today you are in for a special treat! It's a Roald Dahl Day blog hop! Roald Dahl was one of my favorite authors as a child and now my youngest daughter loves him also. Roald Dahl wrote so many wonderful children's books. He managed to take you on an amazing adventure with every page. Whether you take a trip to the magical world of Charlie's chocolate factory or squirm in your seat hoping that Mr. Fox will out fox the horrible farmers. You are always in for a treat when you turn a page in one of Dahl's beloved books. Here's to you Mr. Dahl. Thank you for the many adventures I took as a child!

I decided to do a Fantastic Mr. Fox lunch today. It is my youngest daughters favorite book!


In todays lunch. A ham Mr. Fox sandwich, cheese, cucumbers, carrots, broccoli, peppers, snap peas, grapes, and yogurt covered cookies.


Now Mr. Fox is a sly fox. He has a wife and a lot of children to feed. He provides for them by sneaking onto the farms and stealing fowl. His family loves fowl! The 3 farmers in the neighborhood hatch a plan to stop Mr. Fox! Will they catch him in a trap or be out foxed. Mrs. Fox believes that Mr. Fox is fantastic. First Week of School!

Hello everyone! This is our first week back at school and let me tell you it has been a busy one! This year we have two fifth graders, a seventh grader. and a college student! If this is your first week I hope you have had a good one! This post has our lunches from Tuesday through Thursday. The kids are buying lunch tomorrow. It's pizza day! To get started here are our first day back lunches.


The girls have apple shaped ham sandwiches and the boy has a #1 t-shirt pepperoni sandwich. Each kiddo has veggies and/or fruit to their liking.


Thursday everyone had DIY Lunchables. Even my mom got one! They all have ham, pepperonis, veggies and fruit. The kids each got a pack of fruit snacks and mom and one kiddo have cheese.


This is lunch for the boy today. He is a huge fan of Pokémon. He has a Pikachu pepperoni sandwich, pretzels, grapes, an orange, and a cookie.


The girls had kitty ham sandwiches, pretzels, cookies, veggies, and fruit.

Now that the first week of school is almost over I am ready for the weekend! I hope you had a great week!

Fit & Fresh Bento Lunch Kit Review!

Hello, today I have a review on the Fit & Fresh bento lunch kit. Fit & Fresh has a lot of really cool lunch containers. Pun intended! Since I do a lunch blog we thought the bento lunch kit would be the perfect fit for our family. Of course I am looking forward to trying some of the other products they offer also but todays post is all about the bento lunch kit.

Today I used the lunch kit for my moms lunch. She really liked the overall look of the kit and is the first to use it in our family. In my family getting to use a new bento item means you are our "Special Lunch Packer" of the day. Everyone takes turns trying new products first so everyone has a special lunch at some point.



Above you have the complete bento lunch kit. The bento box itself has a place in the lid to snap the two icepacks into. You just freeze them and pop them into the top when you are ready to pack your bento kit into the bag. The bento lunch kit also comes with this very cute a sturdy insulated travel bag and two half cup bento pods with lids. The pods are a favorite feature of mine. They keep foods separated and safe inside the pod with the lids snapped firmly in place. It doesn't hurt that they are cute also! The bento lunch kit is also BPA & PVC free.


For lunch my mom took homemade chicken salad, packed in the blue pod. Vanilla yogurt with dye free sprinkles from India Tree are packed in the yellow pod. She also has cheese, two whole wheat bagels, and grapes. This is a pretty good looking lunch for a working gal if I do say so myself. Mom was pleased with it!

All in all I really like the Fit & Fresh bento lunch kit. It has plenty of room for a grown up lunch. I also love the fact that with a few adjustments by using the pods you can make it work for smaller appetites. It is very durable and made very well. The only thing I would change is the size of the lunch bag. I would love to be able to slide a reusable water bottle in.

Happy Bento! Lunches On The Go! Book Review

Hello all. Today I have a special treat. I received a copy of Happy Bento, Lunches On The Go a couple of weeks ago. Today you get to take a look at a couple of my lunches inspired by the book. I absolutely love bento, I also absolutely love cookbooks. So when I was offered a chance to review a copy of Happy Bento, I jumped at the opportunity. This little book, by Anna Adden, is to die for awesome. The lunches are so easy to make and you will have no problem finding inspiration for lunchtime. So without further ado, I give you lunch, inspired by Happy Bento!



This lunch was so quick and very simple. I knew I had to make it for the oldest because she loves an apple sandwich. It could also be eaten as a large snack or for breakfast. This little lunch is very versatile. You can see Anna"s version is done with a little rocket ship cutter, I didn't have that particular cutter so I used a star instead.


In this lunch the oldest has a apple sandwich with cookie butter, grapes, orange pieces and a few yogurt covered pretzels.

 
This lunch is called "Bee-Inspired"  I loved the bee theme and decided to do my own lunch and use Anna's lunch for inspiration. I am always inspired by my fellow bento bloggers. They have wonderful lunch creations.                                                                                                      
 
 
This lunch was pretty simple to create. Plus I had a great book for inspiration. In this lunch my youngest has bee and tulip cookie butter sandwiches, broccoli, sweet peppers, oranges and grapes.
 
 
 
I absolutely love Anna's book. I can see myself using it for inspiration anytime I am lacking creativity. The great thing about bento is you can swap out any of the ingredients to suit your kids likes, Or just to be inspired. I highly recommend Happy Bento! Homemade Pretzel Bread Sammies!

Saturday I tried my hand at making homemade pretzel hotdog buns and pretzel bread loaves. I have made soft pretzel bites before and they are delicious. So why would buns and bread be any different? The buns and bread turned out great. They were not pretty at first but they were very yummy. The bread was as pretty as it was tasty.


Here is a picture of my homemade pretzel hotdog buns. We had hotdogs, bratwurst and cheddar sausages on these. They were yummy!


Looks good right? Well it is and this is the bread I used in todays Yumbox lunch.


This was my dinner. I know, I know it isn't very healthy. But dang was it good and onions are veggies!

 
Here are todays Yumbox lunches for my kiddo and aunt. My daughter has an appointment and my aunt is taking her. Boy that makes my life easier because I don't have to take all the kids with us. That is a headache waiting to happen. I can stay in the safety of my own home and get a headache. Ha! Ha!


Both my aunt and daughter had basically the same lunch. The only difference is the sandwich. They both have a clementine, fresh blueberries, grapes, cherries, and cashews. My aunt has a ham and provolone sandwich on homemade pretzel bread. I also packed mustard and mayo for her. My kiddo is a plain sammie kind of girl and has just ham on her homemade pretzel bread.           

Making bread is pretty fun and very tasty. Next on the to try list is English muffin bread. I'll let you know how it turns out! Packing Lunch With Sistema!

About a year ago several of my blogger friends were talking about these containers made by Sistema. Everything they posted looked great in them so when I found them at Marshalls I bought some. I have been adding to them ever since. You can find them at Target and on Amazon also. These containers come in all kinds of shapes and sizes. You can find a perfect size Sistema container for anything! Here are some examples of how I use my Sistema containers.


As you can see these are awesome containers! In the next two pictures I show you what I packed in each container.


I have everything from a simple orange for snack to a easy lunch shown here.


I even used the divided container above to hold pre-cut apple slices in the fridge. (I add pineapple juice to the apple slices and toss in a bowl until coated to keep them from browning) My two youngest daughters snagged the sandwiches and veggie chips for lunch. They added some apple slices and cookies to complete lunch.

I use these containers almost everyday. I fill several of them with snack items and keep them in a basket for my kids to grab for school. I keep the dip containers filled with peanut butter for apple dipping and pretzels. You can pack anything you want in these. Below I have some links to some of the boxes on Amazon.
