It has been quite some time since my last blog post. Over the last four weeks we have had eight snow days. When that was over I had one little girl who just couldn't shake a yucky virus. Then everyone was feeling much better. Today mommy, daddy and the boy aren't feeling well. We can't catch a break. But I made lunch for tomorrow anyway. It was EASY! Who doesn't like easy? Here is tomorrows Simple & Easy lunches.

In this lunch: Half an Applegate ham sandwich, carrots, cucumbers, sugar snap peas, an orange, blackberries, cashews, a cheese pack and Trader Joe's brand of animal crackers. (I love those. They have no artificial anything and no high fructose corn syrup.)
If you have been with me for awhile you will already know that my boy does not eat veggies. Recently I decided that to not offer them was a shame. Even if he doesn't eat them I have done my job by offering and who knows, Maybe one day he will come home and say he ate some of them. A mom can hope. He has a mini version of the same as above minus the cheese and cashews. I didn't want to overwhelm him.
This lunch has a half of a ham sandwich, cucumbers, carrots, an orange, blackberries, cashews and Trader Joe's cat cookies for people. These three lunches were a snap to throw together.
