It's Roald Dahl Day!!!

Happy Roald Dahl day! Roald Dahl was one of my favorite authors as a child and as an adult with children of my own now I have enjoyed sharing these treasures with my children. Mr. Dahl was a brilliant writer with a lovely and wonderful imagination. His stories are timeless and will continue to delight children for years to come. Now that I'm done gushing over Mr. Dahl I can get to lunch!

 First up is Matilda. This book was one of my favorite books and I am happy to say my children love it as well. Here you have a cute bologna Matilda sandwich, Annie's bunny mix, cucumbers, carrots, and grapes. She also has a granola bar and a snack bag of chips.


James and The Giant Peach is next up on the lunch menu. My youngest girl also has all of the same items listed above in her lunch.


Lastly we have a plain lunch for Mr. No Fancy Lunches! He has P.B.&J., grapes, and a clementine. He also has a granola bar tucked under his sandwich plus a snack bag of chips.





These lunches were inspired by one of the best children's authors ever, in my opinion. Go grab your favorite Dahl book, curl up, and share it with your kiddos today!

Chicken Salad And Fancy Sandwiches!

Today I made three really easy lunches. I used the same chicken salad I made yesterday for the first lunch. You can get the recipe here. The other two lunches were made using a couple of vintage cookie cutters I have. I really became obsessed with vintage cookie cutters a few months ago and I have been on a cookie cutter hunt ever since. You can never have to many cookie cutters, although my husband would disagree with that statement. I also switched it up a bit and used both EasyLunchboxes and Yumboxes! I also included a few of my new food picks I got from Japan for Christmas.



This lunch has chicken salad, sesame crackers, Swiss and Asiago cheese slices, carrots, and apples. He also has two small pieces of banana nut bread.



This is lunch for my middle girl. She has a ham sandwich, carrots, apples, cashews, crackers, and a small piece of banana nut bread.


This is lunch for the youngest girl. She has a ham sandwich, Swiss cheese, cashews, carrots, apples, grapes, and banana nut bread.

Grown-Up Lunches!

A lot of times we tend to only focus on what the kids are having for lunch. Why? Because that's what parents do. They pack the kids a super cute, super healthy lunch and forget about themselves. We end up having a candy bar and soft drink for lunch. Now I don't know about you, but this is totally me. So today I am sharing a few lunches that the adults in my house had last week. These lunches are sure to help us stay on track. All are packed in EasyLunchboxes.


This is a take on the restaurant style bistro box. This is lunch for my mom. She has summer sausage, fresh peppered mozzarella, a boiled egg, grapes, carrots, a cheddar cheese stick, and bagel chips.


This is a lunch I made for myself. I have ribbon noodles with a simple garlic butter sauce I made myself, parmesan cheese, sugar snap peas, peppers, cucumbers, and carrots.


This one was my favorite and the easiest lunches to pull together. The night before I had made crockpot chicken fajitas. They were so tasty and we had quite a bit of leftovers. I have chicken, sautéed peppers and onions, cheddar cheese, and a clementine. This lunch is perfect for the office. To heat just remove the orange and cheese cup, pop in the microwave for about a minute, then put your fajitas together and enjoy!

Crockpot Chicken Fajitas

2-3 lbs. of boneless chicken breast
1 1/2-2 packs of McCormick fajita seasoning  (depending on your taste)
1 cup of water

Put everything in the crock pot and cook on low 6-8 hrs. When fully cooked shred chicken and serve on flour tortillas. I also use this chicken to make chicken nachos. We also stir fry onions and peppers for our fajitas.



All of todays grown up lunches were super easy to make and have a nice variety. Much better than that soft drink and candy bar! Remember that YOU deserve a good healthy lunch also.

Halloween Bento Lunches!

Halloween is almost here. Just a few more days! So these are the last of the Halloween themed lunches. I have three super cute lunches for you today. They are all very simple to make and actually only took thirteen minutes to create. All three lunches are packed in EasyLunchboxes!



Here is a cute witch ham sandwich, yogurt star cookies, broccoli, peppers, cucumbers, cashews, and a clementine.




This lunch has a ghost ham sandwich, cookies, broccoli, peppers, cucumbers, cashews, and a clementine.



Here the youngest had a vampire ham sandwich, cookies, a clementine, broccoli, cucumbers, peppers, and cashews.

Back To School Lunch Post

Back to school season is upon us. Whether you go back to school in a couple of weeks or start back in September like us, back to school season is here. You can see it all around. All the local stores are stocking the shelves with everything you will need to get the kids ready. Now everyone thinks about school supplies but lunch supplies can sometimes be forgotten. I have been packing lunch for about thirteen years now, so I have a couple of tips and some of my favorite lunch supplies for you today. Any of the supplies shown will make lunch packing so easy and fun. At the end of the post I will give you some links to where you can purchase some of the products I use.

First on the list are EasyLunchboxes! These lunchboxes are great. They come in three different color packs and in sets of four. They are durable and affordable. These were the first real bento boxes I used. I still have some from two years ago. They are perfect if you are new to making lunches. They are great for young children, teens, and adults. These are shown with Mini Dippers from EasyLunchboxes and a couple of cloth napkins made by yours truly.



In this picture the EasyLunchboxes are shown with Reduce Water Bottles, plastic cookie cutters from a big set of Wilton cutters, round silicone cupcake cups, the mini dippers, and my handmade napkins. Reduce Water Bottles are great. They come in 16oz and 10oz bottles. They are sold in sets of five. The Wilton cookie cutters come in handy for cutting sandwiches into fun shapes. Silicone cupcake cups come in many shapes and sizes. I recommend starting out with the round and square cups. You can separate food with these and they make your lunches look great and appetizing.


Planetbox is a stainless steel lunchbox. They come in three different sizes. The Rover and Launch are shown here. These lunchboxes are so durable and with last forever! They are perfect for kids of all ages. Planetbox is the way to go if you prefer to stay away from plastics. We love our Planetboxes!


Next on the list is the Yumbox. These lunchboxes are great for kids of any age although the six compartment ones are geared toward younger children. I use both of these boxes for my kids ages 10-17. I also have packed lunch for myself in them. So I recommend them for all ages.The best thing about the Yumbox is that it is completely leak-proof! You heard right. LEAK-PROOF! It also doesn't hurt that they are super cute!


In the world of bento there are lots and lots of novelty lunchboxes. Here I have a Lego bento box. These are fun little lunchboxes and the kids love them. We have a lot of this type of bento box. The Lego bento box is shown with different shapes of silicone cupcake cups. I told you they come in all shapes and sizes.


A Thermos can really come in handy for packing cold or hot foods for lunch. I plan on using these quite a bit this year. They are a new addition to my lunch essentials. I asked the experts (fellow bloggers) how to use a Thermos and this is what they had to say:
Fill your Thermos with boiling water and let it sit with top on for at least five minutes.
Empty water.
Fill Thermos with heated food and pop the top back on.
To pack your heated Thermos they recommend putting the Thermos in the lunch bag on one side. Use a napkin or another barrier to put between the Thermos and the other foods you pack. Then pop the icepack into the opposite side of the lunch bag. These are tried and true methods



Probably the most important thing to have for lunch is a great lunch bag. These lunch bags belong to my two youngest children. They used them last school year and will be using them again this year. Embark makes a great lunch bag. These bags are still in awesome shape. You can even machine wash them!

 
Lunch time tip: How do you keep your apples from browning? This is a question I get asked all the time. I use pineapple juice to keep my apples from turning brown. I just stir the sliced apples up with a little drizzle of pineapple juice until they are coated. I buy the six pack cans of pineapple juice. That way I only have to open a little can once a week and don't have to waste the rest. I keep the apple slices in the fridge for several days. They stay looking fresh at least that long.

It's Shark Week!

Hello all. Did you know it's Shark Week?  I love Shark Week. I am actually watching it right now while I type up this post! I am actually terrified of sharks and some of the shows really make me squirm. But I still watch. So when one of the kids needed a lunch on the go today I couldn't resist. I made her a simple shark week lunch. She was thrilled with it. Here is my simple shark week lunch.



She has a ham sub sandwich, a clementine, yogurt star cookies, a applesauce pouch and a few chips in the cute reusable shark bag.

I also made a lunch for my aunt who was with the oldest girl today.


She has a turkey, ham and cheese sub. She also has a clementine, yogurt star cookies and chips.

They were so thankful to have a lunch to eat before the drive home. My aunt said I could pack her lunch anytime. It's a great idea to take your lunch with you when you have an outing. You get a healthy meal and save lots of money.

Easter DIY Lunchables!

My kids have really been hit hard over the last several weeks with illness. My youngest has really had it rough. For four weeks we spent a lot of time missing school. I was actually very thankful for all of our snow days this year. They made it possible for her to be home while ill and me not feel like I had to send her back to school before she was completely well. Our latest illness hit Friday morning at 4:30 A.M. It was awful and it hit the youngest first. The dreaded stomach bug found its way in. So I spent my weekend waiting to see who would be next. Sunday morning my middle girl came down with the yuck. It is Monday night and here I sit once again to see who will be the next victim. I thought my son was coming down with it but so far he hasn't. We shall have to wait and see what the night and the morning bring. So today I just made two Easter themed DIY Lunchables. One for my youngest who went back to school today and one for the boy in case he makes it in to school tomorrow.

 
The youngest girl has ham shaped bunnies, chick shaped provolone, a clementine, carrots and cracker rounds from Trader Joe's.                                                                                                                        


The boy has ham shaped Easter eggs, chick stamped pepperoni, cracker rounds, grapes and a clementine.

Simple & Easy Lunch!

It has been quite some time since my last blog post. Over the last four weeks we have had eight snow days. When that was over I had one little girl who just couldn't shake a yucky virus. Then everyone was feeling much better. Today mommy, daddy and the boy aren't feeling well. We can't catch a break. But I made lunch for tomorrow anyway. It was EASY! Who doesn't like easy? Here is tomorrows Simple & Easy lunches.
 We used our  Urban EasyLunchboxes!


In this lunch: Half an Applegate ham sandwich, carrots, cucumbers, sugar snap peas, an orange, blackberries, cashews, a cheese pack and Trader Joe's brand of animal crackers. (I love those. They have no artificial anything and no high fructose corn syrup.)

 
  If you have been with me for awhile you will already know that my boy does not eat veggies. Recently I decided that to not offer them was a shame. Even if he doesn't eat them I have done my job by offering and who knows, Maybe one day he will come home and say he ate some of them. A mom can hope. He has a mini version of the same as above minus the cheese and cashews. I didn't want to overwhelm him.

 
This lunch has a half of a ham sandwich, cucumbers, carrots, an orange, blackberries, cashews and Trader Joe's cat cookies for people. These three lunches were a snap to throw together.

Easy Lunches In EasyLunchboxes!

Today was all about getting lunch thrown together and in the fridge for tomorrow. I was running out of time quickly this afternoon and needed to get lunch done. So I grabbed two pretzel buns from Trader Joe's out of the freezer and got to it. I also got to use my new EasyLunchboxes. I received the new Urban EasyLunchboxes last week. I made three easy lunches and I made them fast!


In this lunch for the youngest girl there is a half of a ham pretzel sandwich, a side salad, a slice of cheese, cucumbers, carrots, a half an orange, grapes and a small bag of baked chips.


This is lunch for the Middle school girl. She has the same as her sister except she didn't take a cheese slice.


This is lunch for Mr.Picky. lol He has a whole pepperoni pretzel sandwich, grapes, an orange, a banana and a small bag of chips.

Valentine Lunches!

It is February! Yay! It is time for Valentines lunches. I love to make sweet lunches for my lovies! So here is a quick lunch post!

This is lunch for the middle girl. She has a robot ham sandwich, carrots, a half of a mandarin orange, apples and pretzels.


This is lunch for my youngest love. She has heart shaped ham sandwiches, a Babybell cheese, half an orange, apples, sugar snap peas, carrots and pretzels.


This is lunch for my niece. She has leftover hot wings, pretzels, apples, carrots, a half of a mandarin and Laughing Cow cheese.
